Wine
Wines these days are analyzed and dissected to the core by flavor profile, mouth sensation, color and many more variables. Wine is a highly personal experience and flavor associations are often coloured by ones’ own perception.
We talk about wines as if they have a character, it is therefore that wines without character are not worth mentioning.
A wine can be boisterous or introverted, joyful or complex, youthful or solemn. Our cuisine demands a great variety of styles, but an overly acidic or hefty wine rarely make it to the table. The wines that do make the cut possess loyalty to the grape, a nice harmony between acidity and richness and a good hint of minerality.
All our wines are from Europe, made by winemakers who see their plot of land as a temporary loan; many generations have made wine before them and they are making sure many generations after them will be able to. Organic, bio-dynamic and lutée raisonée are common practices with our winemakers.
At eendracht we have a wine arrangement and wine list, both demand a unique approach.
Wine arrangement
Our wine arrangement consists of a matching glass of wine per course, there is a 4 and a 6 course version. Each wine is selected to pair with a specific dish in the menu

While it is important for the arrangement to select a wine for each course individually, it is our challenge with the winelist to select wines that match our style of cuisine, to ensure they will accompany several dishes. Our winelist is comprised of wines that are more gastronomic, or wines with more nuance and traits, not the easiest of wines, but the ones that deliver a challenging glass.
We charge a set amount on top of the purchase price of our wines. This is the reason our winelist is very affordable and obtainable. We enjoy offering you a good glass of wine, and strive to keep the prices down. A practise that is much more common in other parts of Europe then in Holland.
